Unlike sea or freshwater snails, Mountain Snails (Ốc Núi) live inside limestone caves and only emerge during the rainy season (from April to August). They feed exclusively on wild mosses and medicinal plants growing on the limestone cliffs, giving their meat a distinctive, crunchy texture and a subtle herbal flavor.
How to enjoy: The most authentic way to taste them is Ốc Núi Hấp Sả Gừng (steamed with fresh lemongrass, lime leaves, and crushed ginger). Dip them in a sweet-and-sour fish sauce loaded with chili and garlic to complement their natural crunchy texture.
